Produced by La Casera in Tuscany, this cheese is young and spicy. The short aging of this cheese or semi-stagionato (think of pecoretto as a baby percorino) yields a lighter flavor profile and demure acidity which serves as a springboard for the bright and multi layered notes from the pink peppercorn. Giving this cheese a slightly peppery and citrus finish.
